Method

Prepare the Mushrooms

    Prep the Mushrooms

    Preheat your oven to 375°F (190°C). Clean the Portobello mushrooms by gently wiping them with a damp cloth. Remove the stems and set them aside.

    Season the Mushrooms

    Brush the mushrooms with olive oil and season with salt and black pepper. Place them on a baking sheet, gill side up.

Make the Crab Filling

    Combine Ingredients

    In a mixing bowl, combine the crab meat, softened cream cheese, minced garlic, chopped green onions, breadcrumbs, lemon juice, Dijon mustard, paprika, salt, and black pepper. Mix until well combined.

    Stuff the Mushrooms

    Take a generous amount of the crab filling and stuff each mushroom cap until they are heaping full.

Prepare the Lemon Butter CAPS Sauce

    Melt the Butter

    In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Remaining Ingredients

    Stir in the lemon juice, capers, chopped parsley, salt, and black pepper. Let it simmer for 2-3 minutes to blend the flavors.

Bake and Serve

    Bake the Mushrooms

    Bake the stuffed mushrooms in the preheated oven for about 20-25 minutes or until they are golden brown and heated through.

    Serve with Sauce

    Remove the mushrooms from the oven and drizzle the lemon butter CAPS sauce over the top before serving.
