Preparation
1. Clean Shellfish
Rinse the clams and mussels under cold water to remove any sand or debris. Discard any that are open and do not close when tapped.
2. Prepare Shrimp
Peel and devein the shrimp. Pat them dry with a paper towel.
3. Prepare Aromatics
Chop the garlic finely and roughly chop the fresh basil leaves.
Cooking
4. Heat Oil
In a large pot or deep skillet, heat the olive oil over medium heat.
5. Sauté Garlic
Add the minced garlic to the pot and sauté for about 1-2 minutes until fragrant, but not browned.
6. Add White Wine
Pour in the white wine and bring to a simmer. Allow it to cook for about 3-4 minutes.
7. Cook Shellfish
Add the cleaned clams and mussels to the pot. Cover with a lid and cook for about 5-7 minutes, or until the shells open up.
8. Add Shrimp & Scallops
Once the clams and mussels are opened, add the shrimp and scallops to the pot. Season with salt and black pepper. Cover and cook for an additional 5-7 minutes, until the shrimp are pink and the scallops are opaque.
9. Finishing Touches
Remove the pot from heat and stir in the chopped fresh basil.
