Cake Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine 170g of dark chocolate and 115g of unsalted butter. Place the bowl over a saucepan of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Whisk Eggs and Sugar

    In a separate mixing bowl, whisk together 100g of granulated sugar, 2 large eggs, and 1 large egg yolk until the mixture is pale and thick.

    Combine Mixtures

    Gradually pour the melted chocolate and butter mixture into the egg mixture, stirring constantly to combine. Add 1 tsp of vanilla extract and a pinch of salt, mixing well.

    Add Flour

    Sift 50g of all-purpose flour over the chocolate mixture and gently fold it into the batter until just combined. Be careful not to overmix.

    Preheat your oven to 220°C (425°F). Grease four ramekins with butter and dust with flour to prevent sticking.
