Prepare the Chicken
In a slow cooker, place the chicken breasts. Drizzle with olive oil, and season with salt and black pepper. Cover and cook on low for 6-8 hours, until the chicken is tender and easily shredded.

Shred the Chicken
Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the Memphis-style BBQ sauce. Let it heat for an additional 30 minutes.

Assemble the Sandwiches
Toast the hamburger buns if desired. On the bottom half of each bun, add a generous portion of the pulled BBQ chicken. Top with crispy fried onions and a slice of pepper jack cheese. Place the top half of the bun to finish.
