1. Shake Ingredients
In a cocktail shaker, combine the tomato gin, quinquina, raspberry liqueur, fresh lemon juice, aquafaba, and fresh mint leaves. Fill the shaker with ice cubes.
2. Shake Vigorously
Seal the shaker and shake vigorously for about 15-20 seconds to chill and mix the ingredients well.
3. Strain and Serve
Strain the mixture into a chilled cocktail glass. Optionally, you can fine strain to remove mint leaves.
4. Garnish and Enjoy
Garnish with a mint sprig on top and serve immediately.
