Prepare Enchilada Filling

    Cook the Meat

    In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Add Meat and Spices

    Add the ground beef or shredded chicken to the skillet. Stir in chili powder, ground cumin, salt, and pepper. Cook until the meat is fully cooked, about 5-7 minutes.

    Mix in Beans and Corn

    Stir in the black beans and corn kernels. Cook for an additional 2-3 minutes until heated through. Remove from heat and mix in 1 cup of shredded cheese.

Make Enchilada Sauce

    Heat Olive Oil

    In a medium saucepan over medium heat, add the olive oil and heat for about 1 minute.

    Combine Ingredients

    Add the tomato sauce, chili powder, ground cumin, garlic powder, salt, and water to the saucepan. Stir well and bring to a simmer. Cook for 5-7 minutes, stirring occasionally.

Assemble Enchiladas

    Prepare Tortillas

    Preheat your oven to 350°F (175°C). Warm the corn tortillas in a dry skillet or microwave for easier rolling.

    Fill Tortillas

    Take one tortilla, spoon about 1/4 of the enchilada filling into the center, and roll it up tightly. Place seam-side down in a baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Pour the enchilada sauce over the rolled tortillas, making sure they are well covered. Sprinkle the remaining 1/2 cup of shredded cheese on top.

    Bake

    Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

    Serve

    Garnish with chopped cilantro and serve with sour cream if desired.
