Prepare Chimi Filling

Combine Ingredients
In a mixing bowl, combine the Monterey Jack cheese, chiles toreados, and your choice of ground beef, chicken, pork, or shredded beef. Mix well until all ingredients are evenly distributed.
Assemble Chimis

Fill Tortillas
Take a flour tortilla and place about 2 tablespoons of the filling mixture in the center. Fold the sides of the tortilla over the filling, then roll it up tightly to form a chimichanga. Repeat this process with the remaining tortillas and filling.

Heat Oil
In a large skillet, heat the vegetable oil over medium heat until it shimmers.

Fry Chimis
Carefully place the filled chimichangas, seam side down, into the hot oil. Fry for about 3-4 minutes on each side, until they are golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

Serve the torpedos hot with a side of sour cream for dipping.
