Prepare the Filling
In a large mixing bowl, combine shredded chicken or shredded beef with cheddar cheese and taco seasoning. Mix well until all ingredients are evenly combined.

Warm the Tortillas
Heat a non-stick skillet over medium heat. Lightly warm each corn tortilla for about 10-15 seconds on each side until pliable. Keep them wrapped in a clean kitchen towel to retain heat.

Fill the Tortillas
Take a warm tortilla and place about 2-3 tablespoons of the filling mixture in the center. Roll the tortilla tightly around the filling, ensuring the ends are tucked in. Repeat with the remaining tortillas and filling.

Fry the Flautas
In a deep frying pan, heat vegetable oil over medium-high heat until hot. Carefully place the rolled flautas seam-side down in the oil, frying in batches if necessary. Fry for about 3-4 minutes or until golden brown and crispy, turning occasionally. Remove and drain on paper towels.
