Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until evenly mixed.

  2. 2

    Incorporate Shortening

Add the shortening or lard to the flour mixture. Using your hands or a pastry cutter, blend until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add the warm water, mixing until the dough begins to come together. Knead the dough on a floured surface for about 2-3 minutes until smooth.

  4. 4

    Rest the Dough

Cover the dough with a clean cloth and let it rest for about 30 minutes at room temperature.

Frying

  1. 5

    Heat Oil

In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

  2. 6

    Roll Out Dough

After resting, divide the dough into small pieces (about the size of a golf ball). Roll each piece out on a floured surface to about 1/8 inch thick.

  3. 7

    Fry Sopapillas

Carefully drop the rolled-out dough into the hot oil. Fry for about 1-2 minutes on each side, or until they puff up and turn golden brown. Remove with a slotted spoon and drain on paper towels.

Serving

  1. 8

    Serve

Drizzle the fried sopapillas with honey or sprinkle with sugar to taste. Enjoy warm!
