Method

Preparation of Burrito Filling

  1. 1

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into small pieces.

  2. 2

    Prepare the Chicken

If not already cooked, grill the chicken breast until fully cooked and juices run clear. Let it rest for a few minutes, then chop into bite-sized pieces.

  3. 3

    Mix the Filling

In a large bowl, combine the grilled chicken, chopped bacon, Monterey Jack cheese, cheddar cheese, and pico de gallo. Mix well to combine.

Assembling the Burritos

  1. 4

    Fill the Tortillas

Lay out each flour tortilla on a clean surface. Spoon an equal amount of the filling mixture onto the center of each tortilla.

  2. 5

    Roll the Burritos

Fold the sides of the tortilla over the filling, then roll it tightly from the bottom up to enclose the filling completely.

Baking the Burritos

  1. 6

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 7

    Prepare for Baking

Place the rolled burritos seam side down in a baking dish. Pour the New Mexico red chili sauce over the top of the burritos, ensuring they are well coated.

  3. 8

    Add Jalapeno Cream Sauce

Drizzle the jalapeno cream sauce over the burritos for added flavor.

  4. 9

    Bake

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the top is bubbly and golden.

Serving

  1. 10

    Plate the Burritos

Remove the burritos from the oven and let them cool for a few minutes. Serve each burrito with a side of cooked beans and rice.

  2. 11
