Preparing the Beans

    Soak the Beans

    Rinse the dried pinto beans under cold water and then soak them in a large bowl with enough water to cover them by at least 2 inches. Let them soak for at least 6 hours or overnight.

    Cook the Beans

    After soaking, drain and rinse the beans. In a large pot, combine the beans and 4 cups of fresh water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, or until the beans are soft and tender.

Flavoring the Beans

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then add the minced garlic and sauté for an additional minute until fragrant.

    Add Spices

    Stir in the cumin, chili powder, salt, and black pepper. Cook for another minute to toast the spices.

    Mash the Beans

    Once the beans are cooked and tender, drain them (reserving some cooking liquid). Add the beans to the skillet with the sautéed aromatics and spices. Use a potato masher or fork to mash the beans to your desired consistency. If they are too thick, add some reserved cooking liquid until you reach the desired creaminess.

    Finish with Lime Juice

    Stir in the lime juice and adjust seasoning to taste. Cook for an additional 2-3 minutes on low heat, allowing the flavors to meld.
