Prepare the Meat (if using)
In a skillet over medium heat, cook the ground beef, pork, or chorizo until browned and cooked through, about 7-10 minutes. Drain any excess grease and set aside.

Prepare the Queso Dip
In a large saucepan, combine the Velveeta cheese, cream cheese, diced tomatoes with green chilies, and milk. Stir well to combine.

Melt the Ingredients
Place the saucepan over medium heat and cook, stirring frequently, until the cheeses have melted and the mixture is smooth, about 10-15 minutes.

Add Spices
Stir in the chili powder, garlic powder, onion powder, salt, and black pepper. Adjust seasoning to taste.

Incorporate the Meat
If using, add the cooked ground meat to the queso dip and stir until well combined.
