Grate the Cheese
Grate both the Monterey Jack and Cheddar cheese into a large mixing bowl.

Prepare the Tortillas
Lay out the flour tortillas on a flat surface.

Heat the Pan
In a large skillet, heat 1 tablespoon of vegetable oil or butter over medium heat.

Assemble the Quesadilla
On one half of each tortilla, sprinkle a generous amount of the grated cheese blend. Fold the tortilla in half to cover the cheese.

Cook the Quesadillas
Place the folded quesadilla in the heated skillet. Cook for about 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Repeat with the remaining tortillas.

Serve
Remove the quesadillas from the skillet and let cool slightly. Cut into wedges and serve with sour cream on the side.
