Cook the Meat
In a skillet over medium heat, add the ground chicken or ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Add Seasoning
Once the meat is cooked, drain any excess fat. Stir in the taco seasoning mix and 1/4 cup of water. Let simmer for 5 minutes until the sauce thickens.

Prepare Taco Shells
While the meat simmers, warm the taco shells according to package instructions.

Assemble Tacos
Fill each taco shell with the cooked meat, then top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and jalapeños if desired.

Preheat Oven
Preheat your oven to 375°F (190°C).

Prepare Tortillas
In a separate skillet, lightly warm the corn tortillas to make them pliable, about 30 seconds on each side.

Fill Tortillas
Place a few tablespoons of the shredded chicken or beef in the center of each tortilla. Roll them tightly and place seam-side down in a baking dish.

Add Enchilada Sauce
Pour the enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle shredded cheese on top.

Garnish
Remove from the oven, garnish with chopped cilantro if desired, and serve warm.
