Assemble the Enchiladas
Preheat the oven to 350°F (175°C). In a large baking dish, pour a thin layer of enchilada sauce on the bottom. Take a corn tortilla and fill it with a portion of the beef mixture and a sprinkle of shredded cheese. Roll it tightly and place seam-side down in the baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Once all enchiladas are in the dish, pour the remaining enchilada sauce over the top, and sprinkle with any leftover shredded cheese.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve
Once baked, remove from the oven and let cool for a few minutes. Serve hot with a side of cooked beans, rice, and a dollop of sour cream.
