Chili Preparation

    Sauté the Pork

    In a large pot, heat the olive oil over medium heat. Add the diced pork shoulder and cook until browned on all sides, about 5-7 minutes.

    Add Onions and Garlic

    Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.

    Mix in Tomato Sauce and Spices

    Stir in the tomato sauce, chicken broth, cumin, chili powder, paprika, salt, and black pepper. Bring to a simmer.

    Simmer the Chili

    Reduce the heat to low, cover, and let the chili simmer for 1-1.5 hours, stirring occasionally until the pork is tender.

    Finish with Cilantro

    Once cooked, stir in the chopped cilantro and adjust seasoning if necessary.

Charro Beans Preparation

    Prepare the Beans

    Soak the dried pinto beans in water overnight. Drain and rinse before cooking.

    Cook the Bacon and Aromatics

    In a separate pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.

    Sauté Onions and Garlic

    In the same pot, add the chopped onion and minced garlic to the bacon drippings. Cook until the onion is soft, about 5 minutes.

    Combine Ingredients

    Add the soaked pinto beans, green chilies, chicken broth, salt, and black pepper to the pot. Bring to a boil.

    Simmer the Beans

    Reduce heat to low, cover, and simmer for 1.5-2 hours until the beans are tender. Stir occasionally and add water if needed.

    Finish with Bacon and Cilantro

    Once the beans are cooked, stir in the crispy bacon and chopped cilantro.

Serving

    Prepare the Tortillas and Rice

    Warm the tortillas in a skillet or microwave. Serve alongside the cooked rice.

    In bowls, serve the Mexican chili with a generous scoop of charro beans on the side.
