For the Grilled Chicken Sandwich

Prepare the Chicken
In a bowl, mix olive oil, chipotle powder, salt, and black pepper. Coat the chicken breasts with the mixture and let them marinate for at least 30 minutes.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F / 75°C). Remove from grill and let rest.

Assemble the Sandwich
Slice the grilled chicken and place it on a burger bun. Top with fresh lettuce and sliced onion. Drizzle with chipotle dressing.

Make the Dressing
In a bowl, combine mayonnaise, chipotle powder, lime juice, garlic powder, salt, and black pepper. Mix well until smooth. Adjust seasoning to taste.

Prepare the Fries
Preheat the oven to 425°F (220°C). Cut the potatoes into thin strips and soak them in water for at least 30 minutes to remove excess starch.

Season and Bake
Drain and dry the potato strips. Toss them in olive oil, salt, and black pepper. Spread them in a single layer on a baking sheet and bake for 25-30 minutes or until golden and crispy, flipping halfway through.
