    Add the lard (or vegetable shortening) to the flour mixture. Using your fingers or a pastry cutter, work the fat into the flour until the mixture resembles coarse crumbs.

    Gradually add the water to the flour mixture, mixing with your hands until a dough forms. If the dough is too sticky, add a little more flour as needed.
