Preparation of Filling

Prepare the Filling
In a large bowl, combine the cooked chicken or shredded beef with salt, ground cumin, garlic powder, and onion powder. Mix well until the meat is evenly coated with the spices.
Assemble the Flautas

Fill the Tortillas
Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side to make them pliable. Place about 2 tablespoons of the meat filling on one end of each tortilla.

Roll the Tortillas
Roll the tortillas tightly around the filling and secure with a toothpick if necessary.
Fry the Flautas

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot.

Fry the Flautas
Carefully place the rolled flautas in the hot oil, seam side down. Fry for about 3-4 minutes until golden brown and crispy, turning occasionally to ensure even browning.

Drain
Remove the flautas from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve

Plate the Dish
Serve the crispy flautas on a plate alongside refried beans, cooked rice, and a dollop of sour cream or guacamole.
