    In a large mixing bowl, combine the corn masa harina and salt. Stir with a whisk or spoon until well mixed.

    Gradually add the water to the dry mixture, stirring continuously until the dough begins to come together. You may need to adjust the water slightly depending on the humidity.

    Knead the Dough

    Once the dough forms, knead it with your hands for about 2-3 minutes until it is smooth and pliable. If the dough is too sticky, add a little more masa harina; if it feels too dry, add a bit more water.

    Divide the Dough

    Divide the dough into 12 equal portions and roll each portion into a ball. Cover the balls with a damp cloth to keep them moist while you work.

Cooking

    Preheat the Griddle

    Heat a cast-iron skillet or griddle over medium-high heat until hot. You can sprinkle a few drops of water on it; if they sizzle and evaporate quickly, the pan is ready.

    Flatten the Tortillas

    Using a tortilla press or a rolling pin, flatten each ball of dough between two pieces of plastic wrap or parchment paper to about 1/8-inch thick.

    Cook the Tortillas

    Carefully place the flattened tortilla on the hot skillet. Cook for about 30 seconds on one side, or until it starts to puff up and has light brown spots. Flip and cook for an additional 30 seconds on the other side.

    Remove the tortilla from the skillet and place it in a tortilla warmer or wrap it in a clean kitchen towel to keep warm. Repeat with the remaining tortillas.
