    Boil Ingredients

    In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring to a boil over medium heat.

    Add Flour

    Once the mixture reaches a boil, remove it from the heat and add 1 cup of all-purpose flour. Stir quickly until the mixture forms a ball and pulls away from the sides of the pan.

    Incorporate Eggs

    Allow the dough to cool for about 5 minutes. Then, add 2 large eggs one at a time, mixing well after each addition until the dough is smooth.

Cinnamon Sugar Coating

    Mix Cinnamon Sugar

    In a shallow bowl, combine 1 cup of granulated sugar with 2 tablespoons of ground cinnamon. Mix well and set aside.

Frying

    Heat Oil

    In a deep saucepan or fryer, heat 4 cups of vegetable oil to 350°F (175°C).

    Pipe Churros

    Transfer the churro dough to a piping bag fitted with a large star tip. Pipe 4 to 6 inch-long strips of dough directly into the hot oil.

    Fry Churros

    Fry the churros for about 2-3 minutes on each side, or until golden brown. Do not overcrowd the pan; fry in batches if necessary.

    Coat with Cinnamon Sugar

    Remove the fried churros from the oil and drain on paper towels. While they are still warm, roll them in the cinnamon sugar mixture until well coated.
