Chimichanga Preparation

Cook the Filling
In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.

Add Vegetables and Spices
Add the chopped onion, minced garlic, chili powder, cumin, salt, and black pepper to the beef. Cook for an additional 3-5 minutes until the onions are soft.

Assemble the Chimichangas
Spoon a portion of the beef filling onto the center of each tortilla. Fold the sides over the filling and roll tightly. Secure with toothpicks if necessary.
Frying the Chimichangas

Heat Oil
In a deep fryer or large pot, heat oil to 350°F (175°C).

Fry the Chimichangas
Carefully place the chimichangas in the hot oil, a few at a time, and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Mix the Dip
In a mixing bowl, combine cream cheese, sour cream, salsa, and shredded cheddar cheese. Mix until smooth and well blended.
Serving

Plate the Dish
Serve the chimichangas hot, topped with amigo dip. Arrange cooked rice, refried beans, guacamole, and sour cream around the chimichangas on the plate.
