Method

To Prepare the Chicken Fajita Bowl

    Marinate the Chicken

    In a bowl, combine the chicken breasts with 1 tablespoon of olive oil and the fajita seasoning. Let it marinate for at least 15 minutes.

    Cook the Chicken

    Heat a grill or stovetop skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes per side, or until fully cooked (internal temperature of 165°F). Remove from heat and let it rest before slicing.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add sliced onions and bell peppers, and sauté for about 5-7 minutes until they are softened and slightly charred.

    Prepare the Rice

    While the chicken and vegetables are cooking, prepare the rice according to package instructions if not already cooked.

    Assemble the Bowl

    In a bowl, layer the cooked rice, sliced grilled chicken, and sautéed vegetables. Top with shredded cheese.

    Warm the Tortillas

    Warm the flour or corn tortillas in a skillet or microwave for a few seconds until pliable.

To Prepare the Pico de Gallo

    Chop the Ingredients

    Dice the tomatoes and red onion. Finely chop the fresh cilantro.

    Mix Together

    In a bowl, combine the diced tomatoes, red onion, and cilantro. Squeeze the lime juice over the mixture and add salt to taste. Mix well.
