Preparing the Burrito Filling

Season the Meat
Sprinkle the taco seasoning over the browned beef and mix well. Add a splash of water if needed to help the seasoning blend. Let it cook for an additional 2-3 minutes.

Combine with Rice and Beans
In a large bowl, combine the cooked ground beef, cooked rice, and charro beans. Mix well until evenly distributed.
Making the Chili Con Queso

Melt the Cheeses
In a saucepan over medium heat, add the Velveeta cheese, cream cheese, and milk. Stir continuously until the cheeses are melted and smooth.

Add Flavorings
Stir in the diced tomatoes with green chilies, chili powder, garlic powder, and salt. Cook for an additional 5 minutes, stirring occasionally.
Assembling the Burritos

Fill the Tortillas
Lay a flour tortilla flat on a clean surface. Spoon about 1/4 of the burrito filling in the center of the tortilla.

Wrap the Burrito
Fold in the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely. Repeat for the remaining tortillas.

Top with Chili Con Queso
Place the burritos on a serving platter and generously pour the chili con queso over the top.

Serve the CCQ burritos with additional charro beans and cooked rice on the side. Optionally, top with sour cream and chopped cilantro for extra flavor.
