For the Grilled Shrimp

Prepare the Marinade
In a large bowl, mix together olive oil, garlic powder, paprika, cayenne pepper, salt, and black pepper. Add shrimp and toss to coat evenly.

Cook the Rice
In a medium pot, combine white rice, water, and salt. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes or until water is absorbed and rice is fluffy. Remove from heat and let sit covered for 5 minutes.
For the Creamy Amigo Dip

Mix the Ingredients
In a bowl, combine sour cream, mayonnaise, lime juice, chopped cilantro, minced garlic, and salt. Mix until smooth and creamy. Adjust salt to taste.
For the Pico de Gallo

Prepare the Pico de Gallo
In a large bowl, combine diced tomatoes, red onion, jalapeno, lime juice, chopped cilantro, and salt. Mix well and adjust the seasoning as needed.

Make the Jalapeno Cream Sauce
In a blender, combine sour cream, diced jalapeno, lime juice, and salt. Blend until smooth. Adjust salt and jalapeno to taste.

Assemble the Bowl
In a serving bowl, place a generous scoop of rice as the base. Top with grilled shrimp, then drizzle with creamy amigo dip, pico de gallo, and jalapeno cream sauce. Serve with tortillas on the side.
