Prepare the Filling

    Cook the Meat

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic; sauté until the onion is translucent, about 3-4 minutes.

    Add Meat

    Add the ground beef, shredded beef, chicken, or pork to the skillet. Cook until the meat is browned and cooked through, about 5-7 minutes. Season with salt and black pepper.

    Mix in Cilantro

    Stir in the chopped cilantro. Remove from heat and set aside.

Assemble the Enchiladas

    Prepare Tortillas

    Preheat your oven to 350°F (175°C). Warm the flour tortillas in a microwave or on a skillet until they are pliable.

    Fill Tortillas

    Place about 1/2 cup of the meat filling in the center of each tortilla. Sprinkle with cheddar cheese.

    Roll Enchiladas

    Roll the tortillas tightly around the filling and place them seam side down in a baking dish.

Bake

    Add Sauce

    Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle more cheese on top if desired.

    Bake

    Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve

    Plate the Dish

    Serve the enchiladas hot alongside a portion of cooked rice and refried beans.

    Garnish

    Garnish with additional cilantro if desired.
