Prepare Carne Asada

    Cook the Carne Asada

    Season the carne asada with salt, pepper, and your choice of spices. Grill over medium-high heat for about 6-8 minutes per side, or until cooked to your desired doneness. Let rest for 5 minutes, then slice thinly.

Prepare Bacon

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain excess grease, then chop into small pieces.

Make the Quesadilla

    Assemble the Quesadilla

    In a large skillet over medium heat, place one flour tortilla. Layer half of the Monterey Jack cheese, then add the sliced carne asada, crispy bacon, pico de gallo, and the remaining Monterey Jack and cheddar cheeses. Top with another tortilla.

    Cook Quesadilla

    Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Remove from the skillet and let cool for a minute before slicing into wedges.

    Prepare Guacamole

    In a bowl, mash the avocados with a fork. Stir in lime juice, garlic powder, salt, and chopped cilantro until well combined. Adjust seasoning to taste.
