Fish Tacos

    Prepare the Cod

    Preheat a grill or grill pan over medium-high heat. Season the cod filets with salt and pepper to taste.

    Grill the Cod

    Place the seasoned cod filets on the grill and cook for about 3-4 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and set aside.

    Warm the Tortillas

    In a dry skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until pliable.

    Assemble the Tacos

    Place a grilled cod filet on each tortilla. Top with shredded cabbage, a generous drizzle of spiced lime sauce, pico de gallo, crumbled queso fresco, and slices of avocado.

Rice and Beans

    Cook the Rice

    In a medium saucepan, heat olive oil over medium heat. Add the white rice and toast for about 2 minutes, stirring frequently.

    Add Water and Salt

    Pour in 2 cups of water and add 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.

    Prepare the Beans

    In a small saucepan, heat the black beans over medium heat. Stir occasionally until warmed through.
