Potatoes

    Preheat oven to 425°F (220°C).

    Peel and cut potatoes into 1-inch cubes.

    Toss potatoes with olive oil, salt, black pepper, and smoked paprika.

    Spread the potatoes on a baking sheet and roast for 30–35 minutes, flipping halfway, until golden and crispy.

Salsa Brava

    Heat olive oil in a small saucepan over medium heat.

    Sauté garlic and onions until translucent, about 5 minutes.

    Add crushed tomatoes, smoked paprika, cayenne pepper, sugar, and salt. Simmer for 10–15 minutes.

    Stir in sherry vinegar and cook for another 2 minutes.

    Blend the sauce with an immersion blender or in a blender until smooth.

Paprika Aioli

    In a bowl, whisk together mayonnaise, minced garlic, lemon juice, smoked paprika, and salt until smooth.

Assembly

    Place roasted potatoes on a serving plate.

    Drizzle with salsa brava and paprika aioli.

    Garnish with chopped parsley (optional) and serve hot.
