Slice the cheese
Cut the aged goat cheese into thick rounds or wedges, about 1-inch thick, keeping the rind on if present.

Prepare the wine soak
Place the cheese pieces in a shallow container or a glass jar. Pour the red wine over the cheese until completely submerged.

Marinate
Cover the container and refrigerate for at least 24 hours and up to 72 hours. Flip the cheese halfway through to ensure even soaking.
Serving

Remove cheese from the wine and let it drain briefly on a paper towel.

Serve at room temperature with optional garnish of rosemary and cracked black pepper, alongside crusty bread or olives.
