    Preheat oven to 375°F (190°C).

    Bring a large pot of salted water to a boil.

    Blanch cauliflower florets and potato slices in boiling water for about 5–7 minutes until just tender. Drain and set aside.

Make the Gratin Sauce

    In a saucepan, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Stir in the heavy cream and milk, then bring to a gentle simmer.

    Add 1 cup of the grated San Simón cheese, salt, black pepper, and nutmeg. Stir until the cheese has melted and the sauce is smooth. Remove from heat.

Assemble the Gratin

    Grease a baking dish with butter or olive oil.

    Layer the blanched potatoes and cauliflower in the dish.

    Pour the cheese sauce evenly over the vegetables.

    Top with the remaining 0.5 cup of grated San Simón cheese.

    Mix breadcrumbs with olive oil and sprinkle over the top.

Bake and Serve
