Cook short ribs
Season ribs with salt and pepper. Sear in olive oil over medium-high heat until browned on all sides. Remove ribs and sauté garlic and onion in the same pot until translucent. Add red wine and scrape up browned bits. Add beef broth and thyme. Return ribs to pot, cover, and braise at 325°F (160°C) for 2.5 hours. Shred meat and set aside.
Bacon Marmalade

Make marmalade
Cook bacon in a skillet over medium heat until crisp. Remove bacon and set aside. Sauté onions in bacon fat until soft. Add brown sugar, vinegar, maple syrup, and pepper. Simmer until thickened, about 10 minutes. Stir in cooked bacon. Set aside.
Horseradish Cream

Mix sauce
Combine sour cream, horseradish, lemon juice, and salt in a small bowl. Mix well and refrigerate until ready to use.

Assemble flatbread
Preheat oven to 450°F (230°C). Roll out dough into a thin rectangle or oval. Place on a baking sheet lined with parchment. Spread bacon marmalade over dough, then layer with shredded short rib. Sprinkle with Parmesan. Bake for 10–12 minutes until crust is golden and cheese is melted.

Finish and serve
Drizzle with horseradish cream and top with microgreens or arugula if using. Slice and serve hot.
