    Prepare the Ingredients

    Gather all the ingredients. Chop the leeks finely and set aside. If using fresh herbs, chop them as well.

    Sauté the Leeks

    In a large skillet, heat the olive oil over medium heat. Add the chopped leeks and sauté until they are soft and translucent, about 5 minutes.

    Mix the Eggs

    In a bowl, whisk the eggs with salt and pepper until well combined.

    Combine and Cook

    Add the sautéed leeks to the egg mixture and stir in the oven cured tomatoes. Pour the mixture back into the skillet over medium heat. Cook until the edges start to set.

    Add Boursin Cheese

    Crumble the boursin cheese over the top of the omelette. Continue to cook until the eggs are fully set, about 3-5 minutes.

    Serve

    Gently fold the omelette in half and slide it onto a plate. Garnish with fresh herbs if desired and serve immediately.
