Method

Prepare the Crepe Batter

    Mix the Batter

    In a large mixing bowl, whisk together the flour and salt. In another bowl, combine the eggs and milk, then gradually add to the flour mixture, stirring until smooth. Stir in the melted butter. Let the batter rest for 30 minutes.

Cook the Crepes

    Cook

    Heat a non-stick skillet over medium heat. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom. Cook for 1-2 minutes until the edges lift and the bottom is golden. Flip and cook for another 1-2 minutes. Repeat with remaining batter.

Fill the Crepes

    Fill and Serve

    For sweet crepes, spread Nutella, add sliced strawberries, and top with whipped cream. For savory crepes, fill with cooked spinach, feta, mushrooms, and onions for one option, or chicken, Swiss cheese, and Dijon mustard for another. Fold the crepes and serve warm.
