Prepare the Lyonnaise Potatoes
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add sliced onions and sauté until translucent, about 5 minutes. Add in the pre-cooked or boiled potatoes, season with salt and pepper, and continue cooking until they are golden brown, about 10-15 minutes. Remove from heat and set aside.

Cook the Flat Iron Steak
Season the flat iron steak generously with salt and pepper. In the same skillet, add 1 tablespoon of olive oil over medium-high heat. Once hot, place the steak in the skillet and cook for about 4-5 minutes on each side for medium-rare. Adjust cooking time for desired doneness. Once done, let it rest for a few minutes before slicing.

Cook the Eggs
In a separate non-stick pan, melt 1 tablespoon of butter over medium heat. Crack the eggs into the pan and cook them to your liking (sunny-side up, over-easy, or scrambled). Season with salt and pepper.

Assemble the Dish
On a plate, serve the sliced flat iron steak, the Lyonnaise potatoes, and the eggs. Garnish with chopped fresh parsley. Serve with the warm baguette on the side.
