In a large bowl, combine the cooked risotto, diced mozzarella, Parmesan cheese, chopped parsley, salt, and black pepper. Mix until well combined.

Using your hands, take about 2 tablespoons of the risotto mixture and form it into a ball. Repeat until all the mixture is used.

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.

Roll each risotto ball first in flour, then dip in the beaten eggs, and finally coat with breadcrumbs. Ensure each ball is fully covered.
