Eggplant Parmesan

    Prepare the Eggplant

    Slice the eggplant into 1/4 inch thick rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture, then rinse and pat dry.

    Layer the Ingredients

    In a baking dish, layer marinara sauce, eggplant, mozzarella, and parmesan. Repeat layers until ingredients are used up, finishing with cheese on top.

    Bake in a preheated oven at 375°F (190°C) for 30-35 minutes or until the cheese is golden and bubbly.

Braised Beef

    Sear the Beef

    Season the beef with salt and pepper, then sear in a hot pan until browned on all sides.

    Add red wine, beef broth, and any aromatics (like onions and garlic) and bring to a simmer.

    Cover and cook in the oven at 325°F (160°C) for 2-3 hours until tender.

Baked Haddock

    Preheat the oven to 350°F (175°C). Place haddock fillets in a baking dish and season with salt, pepper, and lemon juice.

    Bake for 20 minutes or until the fish is flaky and cooked through.

Salmon

    Preheat the oven to 400°F (200°C). Season salmon fillets with salt, pepper, and lemon juice.

    Place in the oven and bake for 12-15 minutes until cooked through.

Bolognese

    In a large pot, cook ground beef until browned. Drain excess fat.

    Add marinara sauce and simmer for 30 minutes.

Chicken Parmesan

    Pound chicken breasts to an even thickness, season, and dredge in flour.

Chicken Lemon
