    Prepare the Ingredients

    Begin by washing the spinach thoroughly and roasting the tomatoes if not already done. Slice the goat cheese into thin pieces.

    Cook the Eggs

    In a non-stick skillet, heat a little olive oil over medium heat and crack the eggs into the skillet. Cook them sunny-side up or to your desired doneness. Season with salt and black pepper.

    Assemble the Panini

    On one slice of ciabatta, layer the cooked eggs, fresh spinach, roasted tomatoes, and goat cheese. Top with the second slice of ciabatta.

    Grill the Panini

    Heat a panini press or skillet over medium heat. If using a skillet, add a little olive oil. Place the assembled sandwich in the press or skillet and grill until the bread is golden brown and crispy, and the cheese has melted, about 3-5 minutes.

    Remove the panini from the heat, slice in half, and serve immediately while hot.
