Cannoli Shell Preparation

    Make the Dough

    In a large mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add egg and wine (or vinegar) and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 1 hour.

    Roll and Cut the Dough

    After chilling, roll out the dough to about 1/8 inch thickness. Use a round cutter (about 4 inches in diameter) to cut circles from the dough.

    Shape the Shells

    Wrap each circle around a metal cannoli tube, sealing the edges with a little water. Repeat until all dough is used.

    Fry the Shells

    Heat vegetable oil in a deep fryer or heavy pot to 375°F (190°C). Carefully lower the cannoli tubes into the hot oil and fry until golden brown, about 2-3 minutes. Remove and drain on paper towels. Allow to cool slightly before removing the tubes.
