    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into small cubes or strips, about 1/2 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Drain and Dry

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

    Preheat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Fry the Potatoes

    Add the potatoes to the skillet in a single layer. Fry for about 10-15 minutes, turning occasionally, until they are golden brown and crispy.

    During the last 5 minutes of cooking, add diced onions, garlic powder, paprika, salt, and black pepper to taste. Stir well to combine.
