Prepare the Vegetables
Start by roasting a red pepper. You can do this by placing it under a broiler for 10-15 minutes until the skin is charred. Once cool, peel the skin and slice it into strips. Grill the zucchini slices on a grill pan or outdoor grill for about 3-4 minutes on each side until tender.

Assemble the Panini
On one slice of panini bread, spread a generous layer of housemade hummus. Layer the roasted red pepper strips, grilled zucchini, and slices of fresh tomato. Crumble the goat cheese on top of the veggies and then top with another slice of panini bread.

Grill the Panini
Preheat a panini press or a skillet over medium heat. If using a skillet, place a heavy pan on top of the sandwich to press it down. Grill the panini for about 3-4 minutes, or until the bread is golden brown and crispy, and the cheese is melted.
