    Prepare the Tomato

    Slice the medium tomato into thin slices and set aside.

    Assemble the Sandwich

    Spread 1 tablespoon of Boursin cheese on one slice of the country white bread. Layer with slices of Brie cheese and the tomato slices. Spread another tablespoon of Boursin cheese on the second slice of bread and place it on top to complete the sandwich.

    Grill the Sandwich

    Heat a skillet over medium heat and add 1 tablespoon of butter. Once melted, place the sandwich in the skillet. Grill until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Add the remaining butter to the skillet before flipping the sandwich.

    Serve

    Once both sides are golden and the cheese is melted, remove the sandwich from the skillet and let it cool for a minute. Cut in half and serve warm.
