Salad Preparation

    Prepare the Chickpeas

    Preheat your oven to 400°F (200°C). In a bowl, toss the chickpeas with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and crispy.

    Prepare the Crostini

    Slice the baguette into 1/2-inch thick slices. Arrange on a baking sheet, drizzle with 1 tablespoon of olive oil, and toast in the oven for 5-7 minutes until golden brown.

    Prepare the Vinaigrette

    In a small bowl, whisk together the remaining olive oil, juice of 1 lemon (or orange), salt, and pepper to taste. Adjust seasoning if necessary.

    Assemble the Salad

    In a large bowl, combine the mixed greens, halved cherry tomatoes, diced cucumber, and roasted chickpeas. Drizzle with the citrus vinaigrette and toss gently to combine.

    Plate the salad and crumble goat cheese on top. Serve with toasted crostini on the side.
