    Prepare the Ingredients

    Chop the bacon into small pieces and slice the leeks thinly. Rinse and chop the greens.

    Cook the Bacon and Leeks

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the bacon and cook until crispy. Then, add the leeks and sauté until soft.

    Mix the Eggs

    In a mixing bowl, whisk the eggs, salt, and black pepper until well combined.

    Combine and Cook

    Pour the egg mixture over the bacon and leeks in the skillet. Sprinkle the gruyere cheese on top. Cook for 5-7 minutes on medium heat, gently pulling the edges away from the skillet as it sets.

    Bake the Frittata

    Preheat the oven to 375°F (190°C). Transfer the skillet to the oven and bake for 10-15 minutes or until the frittata is set and slightly golden on top.

    Remove from the oven, let cool slightly, and cut into wedges. Serve topped with fresh greens and slices of French baguette.
