    Prepare the Spinach

    In a skillet over medium heat, sauté the fresh spinach until wilted. Season with salt and pepper. Remove from heat and set aside.

    Poach the Eggs

    Fill a large pot with water and bring it to a gentle simmer. Add vinegar. Crack each egg into a small bowl and gently slide them into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and set on a paper towel to drain.

    Toast the Brioche

    While the eggs are poaching, toast the brioche slices until golden brown.

    On each slice of toasted brioche, layer wilted spinach, sliced tomato, and crumbled goat cheese. Top with a poached egg and drizzle with hollandaise sauce.
