    Prepare the Falafel Mixture

    In a food processor, combine the canned chickpeas, parsley, garlic, cumin, coriander, flour, salt, and black pepper. Pulse until a coarse paste forms. If the mixture is too wet, add a bit more flour.

    Form Patties

    Shape the mixture into burger-sized patties, about 1/2 inch thick.

    Cook the Patties

    Heat a non-stick skillet over medium heat and add a tablespoon of olive oil. Cook the patties for about 4-5 minutes on each side, until golden brown. You may need to do this in batches.

    Grill the Zucchini

    In the same skillet or on a grill, brush the zucchini slices with olive oil and grill until tender, about 3-4 minutes per side.

    Make the Lemon Aioli

    In a bowl, mix together mayonnaise, lemon juice, garlic powder, and a pinch of salt to taste.

    Assemble the Burger

    Toast the brioche buns lightly. Spread the lemon aioli on the bottom half of each bun. Add a lettuce leaf, a falafel patty, grilled zucchini, and a slice of tomato. Top with the other half of the bun.

    Serve the falafel burgers warm with your choice of sides.
