    Make the Mornay Sauce

    In a saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for about 1 minute, then gradually whisk in the milk. Continue to cook, whisking constantly, until the sauce thickens. Stir in a pinch of nutmeg, salt, and black pepper. Remove from heat and add half of the Gruyère cheese, stirring until melted.

    Assemble the Croque Madame

    Preheat your oven to 400°F (200°C). Butter one side of each slice of sourdough bread. On the unbuttered side of two slices, layer ham and a generous amount of Mornay sauce. Top with another slice of bread, buttered side out. Repeat for the second sandwich.

    Cook the Sandwiches

    In a skillet over medium heat, cook the sandwiches for about 3-4 minutes on each side until golden brown. Transfer to a baking sheet.

    Add Cheese and Bake

    Spread the remaining Mornay sauce over the top of each sandwich and sprinkle with the remaining Gruyère cheese. Bake in the preheated oven for about 5-7 minutes, until the cheese is bubbly and golden.

    Fry the Eggs

    While the sandwiches are baking, fry the eggs in a small skillet to your desired doneness. Season with salt and pepper.

    Once the sandwiches are out of the oven, top each with a fried egg. Serve immediately.
