Preparation Steps

  1. 1

    Prepare the Corned Beef

Slice the corned beef into thin strips and set aside.

  2. 2

    Toast the Brioche

Toast the brioche slices until golden brown. Set aside.

  3. 3

    Poach the Eggs

Bring a pot of water to a gentle simmer. Add a splash of vinegar. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon and set on a paper towel to drain.

  4. 4

    Assemble the Benedict

On each slice of toasted brioche, layer the sliced corned beef. Place a poached egg on top of the corned beef, then spoon over the hollandaise sauce.

  5. 5

    Garnish and Serve

Sprinkle with salt, black pepper, and chopped chives. Serve immediately.
