    Prepare the Rice and Beans

    In a pot, combine brown rice with 2 cups of water, a pinch of salt, and bring to a boil. Reduce heat, cover, and simmer for about 40-45 minutes or until rice is tender. In a separate pot, heat the black beans until warmed through.

    Cook the Sweet Plantains

    Peel the sweet plantains and slice them diagonally into 1-inch thick pieces. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the plantain slices and cook until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining olive oil. Sauté diced onions and bell peppers until they are soft and slightly caramelized, about 5-7 minutes. Add the sliced portobello mushrooms and cook until they are tender, approximately 5 more minutes. Season with salt and pepper.

    Make the Pico de Gallo

    In a bowl, combine diced tomatoes, chopped cilantro, juice from lime, and a pinch of salt. Mix well.

    Assemble the Dish

    On a plate, serve a generous scoop of rice, topped with black beans, sautéed vegetables, and sweet plantains. Add a side of pico de gallo and slices of avocado.
