    Prepare the Rice and Beans

    In a pot, combine the white rice, black beans, salt, cumin, and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the water is absorbed.

    Cook the Sweet Plantains

    Peel and slice the sweet plantains diagonally into 1-inch thick pieces. Heat the olive oil in a skillet over medium heat and add the plantain slices. Cook for about 3-4 minutes on each side until golden brown and caramelized.

    Prepare the Empanadas

    Preheat your oven to 375°F (190°C). Fill each empanada dough with a portion of vegan cheese and fold over. Seal the edges with a fork. Place on a baking sheet and bake for about 15-20 minutes or until golden brown.

    Assemble the Dish

    On a plate, serve a portion of the rice and beans. Top with the caramelized sweet plantains, a baked empanada, chopped lettuce, pico de gallo, and sliced avocado.
